Slow Cooker Cinnamon Raisin Rice Pudding
This creamy slow cooker rice pudding is a cozy, old-fashioned dessert made with simple pantry ingredients. Uncooked short-grain rice slowly cooks in sweet cinnamon-vanilla milk with plump raisins until it becomes tender, creamy, and comforting.
Ingredients
– 1 cup uncooked short-grain white rice, such as Arborio or sushi rice
– 4 cups whole milk
– ½ cup granulated sugar
– 1 teaspoon ground cinnamon
– 2 teaspoons vanilla extract
– ½ cup raisins
– ¼ teaspoon kosher salt, optional but recommended
– 1 tablespoon unsalted butter or neutral oil, for greasing the slow cooker
Instructions
1. Prepare the Slow Cooker
Lightly grease the inside of your slow cooker with butter or a little neutral oil. This helps prevent the rice pudding from sticking and makes cleanup easier.
2. Add the Rice
Spread the uncooked short-grain rice evenly across the bottom of the slow cooker.
Do not rinse the rice. The natural starch helps give the finished pudding its thick, creamy texture.
3. Make the Milk Mixture
In a large bowl or measuring jug, whisk together the whole milk, sugar, cinnamon, vanilla extract, raisins, and salt.
Continue whisking until most of the sugar has dissolved and the cinnamon is evenly distributed throughout the milk.
4. Pour Over the Rice
Carefully pour the milk mixture evenly over the uncooked rice.
Make sure the rice is completely submerged in the liquid.
Give everything a very gentle stir to separate any rice that may have clumped together, but avoid aggressively scraping the bottom of the slow cooker.
5. Slow Cook
Cover the slow cooker with the lid.
Cook on LOW for 2½ to 3½ hours, or until the rice is completely tender and the mixture has become thick and creamy.
Begin checking around the 2½-hour mark because slow cookers can vary in temperature and cooking speed.
6. Stir and Adjust
Once the rice is tender, stir the pudding thoroughly.
It may appear slightly loose immediately after stirring, but it will continue to thicken as it cools.
If the pudding becomes too thick, simply stir in a small splash of milk until you reach the consistency you prefer.
7. Serve
Switch the slow cooker to WARM and allow the pudding to sit for about 10–15 minutes.
Serve warm with an extra sprinkle of cinnamon on top.
