In a separate large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, cloves, nutmeg, and salt. If using chopped nuts, stir them into the flour mixture.

Step 5: Mix the Batter

Gradually fold the dry ingredients into the honey mixture using a spatula or wooden spoon. Mix only until everything is combined. Avoid overmixing, as this can make the bars dense.

Step 6: Bake

Spread the batter evenly into the prepared pan and smooth the surface with a spatula. Bake for 25–30 minutes, or until the top is lightly golden and a toothpick inserted in the center comes out clean.

Step 7: Cool Completely

Allow the bars to cool in the pan for about 20 minutes before transferring them to a wire rack. Let them cool completely before adding the glaze.

Step 8: Prepare the Glaze

Whisk together the powdered sugar, milk, vanilla extract, and melted butter until smooth and pourable. If the glaze is too thick, add a little more milk. If it’s too thin, add more powdered sugar.

Step 9: Glaze and Slice

Spread the glaze evenly over the cooled bars. Let it set for 30–45 minutes before slicing into squares or rectangles.

Tips for the Best Honey Bars

For the most authentic flavor, store the bars in an airtight container for 3 to 7 days before serving. The honey and spices become richer and more aromatic with time.

Place a slice of apple or a piece of bread in the container if the bars become too firm. Remove it after a day to keep the bars soft.

These bars freeze beautifully for up to three months.

They pair wonderfully with hot coffee, tea, or mulled wine during the holiday season.

Storage

Store the bars in an airtight container at room temperature for up to one week or refrigerate them for up to two weeks. The flavor often improves after the first couple of days, making them an excellent make-ahead dessert for parties and holiday gatherings.
