1 cup heavy whipping cream, cold

1 cup fresh or frozen blueberries

1½ cups fresh or frozen blueberries

¼ cup granulated sugar

1 tablespoon cornstarch

2 tablespoons water

½ teaspoon vanilla extract

Optional toppings:

Fresh blueberries

Whipped cream

Lemon zest

Fresh mint leaves

1. Prepare the cheesecake crust

Start by crushing the graham crackers into fine crumbs. You can use a food processor or place them in a sealed bag and crush them with a rolling pin.

Combine the crumbs with melted butter, sugar, and a small pinch of salt. Mix thoroughly until all the crumbs are evenly coated and the mixture resembles damp sand.

Press the mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a glass or measuring cup to create a firm, even layer.

Place the crust in the refrigerator for at least 20–30 minutes while you prepare the filling.

2. Prepare the blueberry topping

Add the blueberries, sugar, lemon juice, cornstarch, and water to a small saucepan.

Cook over medium heat, stirring gently. As the blueberries warm up, they will begin releasing their juices.

Continue cooking until the berries soften and the mixture becomes thick and glossy.

Remove the saucepan from the heat and stir in the vanilla extract.
