Authentic Moroccan Beef Tagine

 

Tender beef slow-cooked with aromatic spices, onions, and vegetables creates one of Morocco’s most beloved traditional dishes. Rich in flavor and incredibly comforting, this classic tagine is perfect for family meals and special occasions.

 

Ingredients:

 

– 2 lbs (900g) beef, cut into chunks

– 2 large onions, sliced

– 3 garlic cloves, minced

– 3 tbsp olive oil

– 2 tomatoes, chopped

– 3 carrots, sliced

– 2 potatoes, cut into wedges

– 1 cup peas

– 1 tsp ground ginger

– 1 tsp turmeric

– 1 tsp paprika

– 1/2 tsp cumin

– 1/2 tsp black pepper

– 1 tsp salt (or to taste)

– 1 small bunch fresh parsley and cilantro, chopped

– 2 cups water or beef broth

Instructions:

 

1. Heat the olive oil in a tagine or heavy pot over medium heat.

2. Add the onions and garlic and cook until softened.

3. Add the beef pieces and brown them on all sides.

4. Stir in the ginger, turmeric, paprika, cumin, black pepper, and salt.

5. Add the tomatoes, parsley, cilantro, and water or broth.

6. Cover and simmer on low heat for about 1½ to 2 hours, or until the beef becomes tender.

7. Add the carrots and potatoes and continue cooking for another 30 minutes.

8. Stir in the peas during the last 10 minutes of cooking.

9. Serve hot with fresh Moroccan bread to soak up the delicious sauce.
